Allopathic medicine (offered by doctors and pharmacies) teaches that the cause of colitis is unknown, that it is incurable, and that having it means you will require lifelong treatment. I completely agree with doctors when they admit they don't know the cause or how to allow the body to heal from colitis.
I quit listening to those who didn't know and asked myself: What reaches our colons that could cause the inflammation? I believe that it is specific foods that cause the over- or under- production of acid, and in some cases an allergic-type reaction.
To understand, imagine a person who is allergic to a certain food but doesn't know what the problem is. That person might eat this food all the time. After a few years of doing this, the person with the allergy will probably have severe and possibly life-threatening digestive, stomach and colon issues, including ulcerations and chronic inflammation. I have proven to myself that this is exactly what we are doing -- eating foods we have allergic and acidic reactions to -- but we call it colitis.
That allergy sufferer's doctor might prescribe medications, acid blockers, pain meds and procedures, but none of this ends the allergy or inflammation. The person still lives in periodic pain and has many health issues. Of course the inflammation gets worse over time, because the cause of the inflammation continues.

What Has Everyone Missed?
My theory is that colitis and ulcerative colitis, like all the other stomach disorders, are related to stomach acid. The others are: GERD, heartburn, acid reflux, Crohn's, diverticulitis, IBD, and IBS, to name a few. All these diseases have one thing in common: acid. In the same way that too much acid causes ulcers in the stomach, it may also cause inflammation and ulcerative conditions in the colon. Medical studies agree that the above conditions are related to the over- or under- production of hydrochloric acid by the stomach during digestion.
This is why some of these diseases are even named after their acidic origins, names such as heartburn and acid reflux. Colitis is one member of the acidic disease group. How can we know if this theory is correct?
I used to suffer from this acid-related digestive disorder. Then for two years I lived overseas. While I was abroad, I generally ate with my local friends and ate what they ate. During that time, I noticed that my digestive condition simply went away. Why would a "disease" go away just because I was eating differently? When I returned home to the U.S. and my "normal" diet, my condition came back. I eventually understood that it was my diet causing the problem.
I did my own research and found that colitis and ulcerative colitis exist predominantly in only five countries. Most countries outside of those have a very low incidence of colitis. Doubt what I am telling you? Here is what doctors at Johns Hopkins said (paraphrased): The disease is most prevalent in the "Western world." Africa and Asia, for instance, have almost no colitis! It's epidemic in 5 places, almost nonexistent elsewhere. We need a colitis diet that works! Here are the medical citations:
